Are you bored of eating the same thing day in day out? Here are some healthy lunch ideas to change things up.
- Tuna stuffed tomatoes: Scoop, mix and stuff with some Tuna. Season with lemon juice, salt and pepper. use beef tomatoes.
- Chicken boiled egg spinach salad: Chicken and soft boiled egg salad with Spinach leaves. add some nuts for a crunch.
- Grilled Chicken Breast with salad: One grilled Chicken breast with cucumber and tomato salad season with lemon juice, salt and pepper.
- Tuna cucumber yoghurt salad: Mix Tuna with Greek yoghurt and some cucumber chunks. Add salt, pepper and a squeeze of lemon, serve on a bed of lettuce.
- Spicy Chicken with Apple and Walnuts and a honey and yoghurt dressing: Cook Chicken breast the night before and season with Cajun spices. Slice one apple, add walnuts and toss in Greek yoghurt, a little honey and a dash of lemon juice. Slice the chicken breast and layer on a plate with apple and salad leaves.
- Layered Apple nut yoghurt parfait: Fill a glass with layers of crisp apples, walnuts and yoghurt.
- Roast Chicken salad with almonds and kale: Leftover roast chicken on a bed of kale with light honey and yoghurt dressing and almonds.
